Homemade Fettuccine w/ Sausage & Grilled Veggies

What a beautiful meal!
Making some tomato sauce. Ever since I started making my own, I can't bring myself to buy it from the store. I use a simple recipe, and it doesn't take long. I also had some fresh basil leftover from making pizza, and that made it even better.
Preparing to make some noodles. Pasta dough is simple, and whole wheat flour is actually available here!

Some nice fresh veggies for roasting - I love the combination of colors, and look forward to the combination of flavors (don't forget to sprinkle some salt on your zucchinis well before grilling to draw out the extra moisture).

Chicken and Veggie Enchiladas

Happy Thanksgiving!!

I made enchiladas for my neighbor's Thanksgiving party. She is a vegetarian, so some of them only had zucchini and mushrooms in them.
These I sauteed, with a little taco seasoning sprinkled on the zucchini, which I left pretty firm, so the veggie ones would have some texture inside.
Of course, I had to respect the meat-eaters at the party (and have something for myself to eat), so I made some with chicken too.
The secret to good chicken enchiladas is pulling the chicken apart with two forks while it's frying. You just keep flipping it over and pulling off as much as you can of the cooked meat.
This technique gives you a pile of stringy chicken that really accepts flavor well - in this case, I used taco spice mix.
The strands of chicken are also a lot easier to work with when it comes time to roll them.

Stuffed Peppers

Beautiful food - as good as it looks.

A solid start - some bread crumbs from Elephant Mart, my local (and very helpful) Korean supermarket.
Garlic and onions - in very generous portions, as usual!
All mixed up - a pile of ground pork with onions. Later, I added mushrooms, zucchini, and a bunch of salt, pepper, and basil.
My little buddies - stuffed and ready to go in the oven. Those are my homemade bagels in the background.

When it was time for cooking, I roasted the peppers in the toaster oven in a bath of pasta sauce with a topping of fresh mozzarella cheese.

Served up with a pan-seared chicken breast topped with fried garlic. Mmmmmm.......
I wish I hadn't eaten it all - oh, the memories!
